The coffee
Colombia Excelso is a grade, not a single farm. That is what makes it reliable. Excelso EP means screen size 15 and above, sourced from Colombia's major growing regions throughout the year. Castillo, Caturra, and the Colombia variety are the backbone of Colombian coffee production, two of which were developed by Cenicafé, the country's agricultural research centre. What you get in the cup is the consistent, dependable best of what Colombian smallholder farmers produce across the country.
Origin
Colombia is not one thing. That is exactly the point. The varieties, the landscape, the altitude, the people. Colombia's coffee story is layered in a way that takes years to fully appreciate. From Huila to Cauca, Nariño to Tolima, regional variations are real and meaningful. Excelso draws from across that map and represents the country's most consistent and accessible expression of what Colombian coffee can be. The smallholder farmers producing it grow very little for commercial sale individually, but collectively they define one of the world's great coffee traditions.
Process
Washed, the Colombian way. Coffee is picked ripe and depulped the same day, then given an open-air fermentation in tanks or buckets for 12 to 36 hours. After fermentation, it is washed clean of its mucilage and dried on patios, in parabolic dryers, solar dryers, or mechanically. The result is a clean, transparent cup that lets the quality of the bean come forward without distraction.
Brew it your way
Dependable on filter. Solid as espresso. On filter at 1:16, the dark chocolate and caramel notes come through clean and balanced. Pull it as espresso at a 1:2 ratio in 28 to 32 seconds and the pecan pie sweetness adds a warmth that rounds out the shot.
